{"id":50058421,"date":"2022-09-16T13:52:38","date_gmt":"2022-09-16T12:52:38","guid":{"rendered":"https:\/\/stage.dialogochino.net\/?p=58421"},"modified":"2023-08-07T19:37:40","modified_gmt":"2023-08-07T18:37:40","slug":"58402-farms-in-uruguay-driving-efforts-towards-carbon-neutral-beef","status":"publish","type":"post","link":"https:\/\/dialogue.earth\/en\/food\/58402-farms-in-uruguay-driving-efforts-towards-carbon-neutral-beef\/","title":{"rendered":"Farms in Uruguay driving efforts towards \u2018carbon neutral\u2019 beef"},"content":{"rendered":"<p>\u201cCattle are not the problem, they are part of the solution,\u201d claims Sebasti\u00e1n Olaso, as he pulls on his boots to head out on Rinc\u00f3n del Sauce, his farm in the department of Florida, southern Uruguay. \u201cCattle eat grass that grows back and in the process fixes carbon in the soil.\u201d<\/p>\n<p>On his 1,300 hectares, Olaso fattens hundreds of Angus steers, the final stage in the production process of Uruguay\u2019s first certified \u201ccarbon neutral beef\u201d, which is also reportedly among the first in the world to be exported under this label. For now, the scale is small, at about 60 tonnes per year.<\/p>\n<p>The concept of \u201cclimate-smart\u201d livestock farming has begun to guide public projects and private enterprises in the livestock sector as they aim to improve their balance sheet of greenhouse gases, to certify procedures and to generate products with higher added value.<\/p>\n<p>Across South America, many in the industry have increasingly sought to position livestock farming as a potentially carbon neutral activity, one in which emissions are offset by carbon storage in the soils of pastures. This has been heard particularly in Uruguay, where pastures prevail.<\/p>\n<p>Though these emissions claims, at a broader sectoral level, are <a href=\"https:\/\/dialogue.earth\/en\/agriculture\/48446-livestock-farming-in-argentina-seeks-a-more-sustainable-horizon\/\">treated cautiously<\/a> by environmental organisations, operations such as Olaso\u2019s are now making notable steps forward in their efforts to pursue \u201cclimate-smart\u201d approaches, and to seek a more sustainable future for beef production.<\/p>\n<h2>Certification<\/h2>\n<p>Olaso runs the Uruguayan livestock company Mosaica, which has been producing its \u201ccarbon neutral\u201d beef for export <a href=\"https:\/\/blasinayasociados.com\/la-certificacion-de-carne-carbono-neutral-comienza-en-el-entore\/\">since December 2021<\/a>. Under its Sol Dorado brand, the first cuts of Angus steers flew to Switzerland labelled with the \u201cCradle to Gate\u201d carbon neutral seal of the <a href=\"https:\/\/lsqa.com.uy\/\">LSQA<\/a>, a joint venture between business standards agencies Laboratorio Tecnol\u00f3gico del Uruguay (LATU) and the Vienna-based Quality Austria.<\/p>\n<p>The certification is based on international ISO standards and adapts the <a href=\"https:\/\/www.ipcc.ch\/report\/2019-refinement-to-the-2006-ipcc-guidelines-for-national-greenhouse-gas-inventories\/\">methodology<\/a> of the Intergovernmental Panel on Climate Change (IPCC) to survey and verify the carbon footprint of meat. It joins a cast of other existing Uruguayan certifications, such as Grass Fed (assuring no grain feeding or feedlot finishing of animals) and <a href=\"https:\/\/www.inac.uy\/innovaportal\/v\/12101\/19\/innova.front\/never-ever-3-certification\">Never Ever 3<\/a> (no antibiotics, growth promoters or animal protein feed).<div class='cdo-shortcode--image'><\/p>\n<figure id=\"attachment_58410\" aria-describedby=\"caption-attachment-58410\" style=\"width: 2000px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-58410 size-full\" src=\"https:\/\/dialogue.earth\/content\/uploads\/2022\/09\/DSC05843-Sebastian-Olaso-Aguirre_PabloBielli-scaled.jpg\" alt=\"A man looking at the camera sitting in front of a desk in an office.\" width=\"2000\" height=\"1333\" \/><figcaption id=\"caption-attachment-58410\" class=\"wp-caption-text\">Sebasti\u00e1n Olaso, director of the beef export company Mosaica, in his office in the department of Florida. \u201cCattle are not the problem, they are part of the solution,\u201d he says (Image: Pablo Bielli \/ Di\u00e1logo Chino)<\/figcaption><\/figure>\n<p><\/div>Olaso explains how he began the process towards certification in February 2020 after reading the results of a focus group on consumer preferences in the European meat market.<\/p>\n<p>Applying for certification requires the recording of a range of different measurements: the balance between emissions and carbon sequestration by the farm itself, livestock, native forests and woodlands, mechanised operations, soil capacity and fertilisation.<\/p>\n<p>Successful certification verifies that the farm has achieved carbon sequestration equal to or greater than its emissions at all stages of livestock production: from birth, breeding and fattening to the point of arrival at the abattoir for slaughter. This includes the certification of external suppliers, such as the cattle transport company.<\/p>\n<p>\u201cTo offset the methane and carbon emissions by carbon sequestration, everything must be in the name of the same company in a closed and complete cycle; it took a year to do the analysis and study, and another year to get all the information from LSQA to complete the certification,\u201d explained Olaso in an earlier <a href=\"https:\/\/blasinayasociados.com\/la-certificacion-de-carne-carbono-neutral-comienza-en-el-entore\/\">interview<\/a>.<\/p>\n<h2>The methane issue<\/h2>\n<p>Livestock manure and digestion processes produce approximately <a href=\"https:\/\/www.unep.org\/news-and-stories\/story\/methane-emissions-are-driving-climate-change-heres-how-reduce-them\">32%<\/a> of global emissions of methane, a greenhouse gas with a high warming effect. In countries where the livestock sector is more dominant, such as Uruguay, this percentage can be much higher.<\/p>\n<div class='block--pullout-stat block--pullout-stat--float cd-shortcode--factbox'>\n                <p class='block--pullout-stat__title'>93%<\/p>\n                <div class='block--pullout-stat__content'>\n                    <br \/>\nThe percentage of Uruguay\u2019s overall methane emissions that result from agricultural activity, with the majority of this coming from livestock production<br \/>\n\n                <\/div>\n            <\/div>\n<p>Of Uruguay\u2019s greenhouse gas emissions, <a href=\"https:\/\/www.gub.uy\/ministerio-ambiente\/politicas-y-gestion\/inventarios-nacionales-gases-efecto-invernadero-ingei\">73%<\/a> come from the agriculture and forestry sector, which roughly corresponds to the profile of a food-producing country. Ninety-three per cent of the county\u2019s methane emissions come from agriculture, primarily from livestock operations.<\/p>\n<p>Uruguay is aiming to reduce emissions from the livestock sector without affecting its productivity. To this end, a public project, <a href=\"https:\/\/www.gub.uy\/ministerio-ganaderia-agricultura-pesca\/tematica\/cuidado-del-suelo?page=5\">Ganader\u00eda y Clima<\/a> (Livestock and Climate), is currently being implemented, which seeks to \u201ccontribute to facing the challenges of the livestock sector through a comprehensive approach that includes improving productivity and sustainability\u201d.<\/p>\n<figure id=\"attachment_56518\" aria-describedby=\"caption-attachment-56518\" style=\"width: 350px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-56518\" src=\"https:\/\/dialogue.earth\/content\/uploads\/2022\/07\/Livestock-methane-emissions_Marcos-Brindicci_Alamy_2CN663T.jpg\" alt=\"Farmer and cows\" width=\"350\" height=\"225\" \/><figcaption id=\"caption-attachment-56518\" class=\"wp-caption-text\"><strong>Read more: <a href=\"https:\/\/dialogue.earth\/en\/uncategorised\/56490-can-south-america-reduce-livestock-methane-emissions\/\">Can South America reduce its methane emissions from livestock farming?<\/a><\/strong><\/figcaption><\/figure>\n<p>Based on the results of a diagnosis of each livestock farm, a programme is designed to modify their production system with low-cost, low-emission practices and technologies. For example, increasing fodder production and quality, as well as the application of certain management techniques and reducing overgrazing.<\/p>\n<p>From 2020 to 2021, the 60 producers participating in the project, whose operations cover a total of 35,000 hectares, reduced emissions of carbon dioxide, methane and nitrous oxide by 5%. In addition, the emissions intensity per kilo of meat was reduced by 16%, all while beef production increased by 10% and lamb by 15%.<\/p>\n<p>\u201cThis is a potential that the country should take advantage of,\u201d <a href=\"https:\/\/www.gub.uy\/ministerio-ambiente\/comunicacion\/noticias\/expo-uruguay-sostenible-se-presentaron-resultados-del-proyecto-ganaderia\">said<\/a> Cecilia Penengo, from the climate change directorate of Uruguay\u2019s Ministry of Environment, during a presentation on the Ganader\u00eda y Clima project in June.<\/p>\n<h2>Added environmental value<\/h2>\n<p>In the cold morning, steam can be seen from the breathing of the steers. The smell is a mixture of fresh dung and wet grass from the meadow planted with yellowy <em>lotus japonicus<\/em>, white clover and red clover.<\/p>\n<p>The animals welcome humans\u2019 touch. \u201cThey are not afraid. This is animal welfare, it shows that the animals have not been mistreated,\u201d says Olaso.<\/p>\n<p>\u201cThese steers go to the slaughterhouse between October and November,\u201d he tells us. They will be between 18 and 20 months old and will weigh around 530 kg, reaching a minimum hanging weight \u2013 the measurement after slaughter and processing \u2013 of 273 kg in order to meet Swiss requirements. The vacuum-packed and chilled cuts will travel in cardboard boxes arranged on wooden pallets in the hold of a plane. They must be on European shelves less than 15 days after the date of slaughter.<\/p>\n<p>Uruguay exported <a href=\"https:\/\/www.inac.uy\/innovaportal\/file\/21459\/1\/inac_anuario_2021.pdf\">572,522 tonnes<\/a> of beef in 2021. Sixty per cent was destined for China, to whom Uruguay was the third largest supplier in terms of volume, behind only Brazil and Argentina, surpassing nations such as the US and Australia.<\/p>\n<p>But the country has little room for growth. In 2021, 2.63 million cattle were slaughtered, an all-time record that is unlikely to be reached again this year. This ceiling means that the focus of competitiveness is on niche meats, with a price differential based on sustainable attributes.<\/p>\n<h2>From trend to norm<\/h2>\n<p>The European market is the most interested in carbon neutral meats, according to Olaso. If, he asks, there are rulings such as no further sales of combustion cars in the EU come 2035, how long before the entry of non-carbon neutral or environmentally friendly meats becomes more limited or even closed to them? Maybe less than a decade, he estimates.<\/p>\n<p>According to the UN Food and Agriculture Organization\u2019s <a href=\"https:\/\/www.oecd-ilibrary.org\/agriculture-and-food\/oecd-fao-agricultural-outlook-2022-2031_f1b0b29c-en\">Agricultural Outlook 2022-2031<\/a>, greenhouse gas emissions from food production will increase 6% over the next decade, with livestock projected to account for 90% of this increase.<div class='cdo-shortcode--image'><\/p>\n<figure id=\"attachment_58404\" aria-describedby=\"caption-attachment-58404\" style=\"width: 2000px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-58404 size-full\" src=\"https:\/\/dialogue.earth\/content\/uploads\/2022\/09\/corte-vacuno-carbono-neutral-Sol-Dorado_PabloBielli-scaled.jpg\" alt=\"packaged beef\" width=\"2000\" height=\"1490\" \/><figcaption id=\"caption-attachment-58404\" class=\"wp-caption-text\">A beef cut from Mosaica brand Sol Dorado, packaged for export to Switzerland, the company\u2019s main buyer. (Image: Pablo Bielli \/ Di\u00e1logo Chino)<\/figcaption><\/figure>\n<p><\/div>However, Olaso says emissions from the sector will grow at a slower rate than its production, thanks to yield improvements and the large-scale adoption of climate-smart production processes and technologies, especially in the livestock sector.<\/p>\n<p>\u201cClearly the world is going that way,\u201d LQSA auditor and executive Patricia Rovella told Di\u00e1logo Chino. \u201cThese are requirements set by markets and consumers who demand more information, in addition to countries\u2019 commitments to reduce their emissions,\u201d added Rovella, a veterinarian specialising in animal welfare in the meat supply chain.<\/p>\n<p>Beyond Uruguay, in May this year, New Zealand\u2019s largest meat processor, Silver Fern Farms, <a href=\"https:\/\/www.prnewswire.com\/news-releases\/silver-fern-farms-celebrates-launch-of-net-carbon-zero-beef-in-new-york-with-new-zealand-prime-minister-jacinda-ardern-301554531.html\">exported<\/a> zero-carbon meats to the United States and celebrated with a presentation in New York. In the US, UK and Australia, carbon neutral meat is also produced on a small scale for the local market.<\/p>\n<p>Rovella highlights the need for \u201cclear communication of the environmental performance of products\u201d in an environment where \u201cambiguous environmental claims such as \u2018ecofriendly\u2019 or \u2018sustainable\u2019 proliferate.\u201d Therefore, she says, certification with the carbon neutral meat label \u201cprovides clarity and support\u201d.<\/p>\n<p>Looking to the future, Olaso once more mentions changes in overseas markets as a driving factor in efforts towards carbon neutral production: \u201cNot just anyone will be able to enter the European market: those who are not certified will have to pay extra fees, and consumers are willing to pay a differential price for products that soothe their conscience, knowing that they are not polluting.\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Uruguay has managed to reduce emissions
