With operations in Hong Kong and Singapore, <a href=\"https:\/\/www.avantmeats.com\/\">Avant Meats<\/a> is developing products that include an animal-free alternative to one of China\u2019s four \u201ctreasures of the sea\u201d \u2013 fish maw.<\/p>\n\n\n\n<p>Maw is the dried version of the swim bladder that fish use to control their buoyancy. In different parts of Asia, particularly southern China, the amber-hued organ is perceived to possess <a href=\"https:\/\/www.researchgate.net\/publication\/337238180_Emerging_from_the_murk_threats_challenges_and_opportunities_for_the_global_swim_bladder_trade\">great nutritional and medicinal value<\/a>.<\/p>\n\n\n\n<p>However, <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0308597X21003079#:~:text=The%20demand%20for%20fish%20maw,shark%20fins%20and%20sea%20cucumber.\">intensifying demand<\/a> for certain types of maw has pushed several species <a href=\"https:\/\/dialogue.earth\/en\/governance\/7915-totoaba-swim-bladder-smugglers\/\">towards extinction<\/a>, including the Chinese bahaba, and the totoaba and <a href=\"https:\/\/dialogue.earth\/en\/conservation\/14478-vaquita-last-hope-lies-with-consumer\/\">vaquita<\/a> in Mexico\u2019s Sea of Cortez.<\/p>\n\n\n\n<p>Chan plans to have a cultivated fish maw product ready for the public in the near future. She hopes this will reduce demand for the real thing. But although the cultivated version will provide the same proteins as the original, it\u2019s uncertain whether it will imbue the same prestige as the eating and serving of real maw.<\/p>\n\n\n\n<a class=\"wp-block-cd-related-news alignright block--related-news loading\" data-post-id=\"40076010\"><div class=\"block--related-news__image\"><\/div><div class=\"block--related-news__content\"><span class=\"block--related-news__heading\">Recommended<\/span><span class=\"block--related-news__title\"><\/span><\/div><\/a>\n\n\n\n<p>A recent <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0309174022003497\">study<\/a> revealed less than half of Chinese consumers say they are willing to try cultivated meat, and only one-third might consider buying it. There are also concerns that, once production costs and so sale price are lowered, the cultivated variety could make maw available to more people, thus stimulating demand for the real thing.<\/p>\n\n\n\n<p>Whatever the eventual impact of lab-grown maw, Chan is committed to raising the issue of the ecological impact of the fish maw trade.
